Pasteurization Temperature vs. Time

Hartzler's milk takes 30 minutes to process using the low temperature vat pasteurization system. Hartzler's is the only dairy in Ohio to process milk this way. The chart below shows the amount of time to process correlated with the temperature that the milk is heated. The lower the temperature, the longer the milk has to be held for it to be pasteurized.
