More Enzymes Promote Proper Digestion

Hartzler’s milk contains more enzymes that are left intact than milk produced by most commercial dairies. These enzymes are crucial for digestion, as they assimilate nutrients into the body. Lactase, for example, converts lactose into energy and phosphatase assimilates calcium into our bones. There are literally dozens of other enzymes in milk that promote proper digestion.

Enzymes are protein molecules that originate in plants, animals, and people. In our food and milk supply, they act as “change agents” in the millions of biochemical reactions that take place in the body. Enzymes play a critical role in digestion, as they break down and help build any substance that the body needs.

What enables Hartzler’s milk to retain a high enzyme concentration is our low-temperature vat pasteurization process. Unfortunately, most milk producers utilize a standard high-temperature pasteurization technique that also destroys beneficial enzymes in the process. Without them, milk is very difficult to digest. The human pancreas is not always able to produce these enzymes and can over-stress the pancreas, which can lead to diabetes and other diseases.

This is because our milk contains the digestive enzyme lactase. Without lactase to help break down the milk sugar lactose, the human body cannot assimilate the milk sugar.

Pasteurization is required by the Food and Drug Administration to kill potentially harmful microorganisms. Hartzler’s low-temperature method complies with all FDA regulations and has always passed quality and safety inspections.

While some people believe that raw milk (unpasteurized and non-homogenized) provides even more benefits than gently-processed milk, such as Hartzler’s milk, there are risk factors involved. Raw milk may harbor a host of disease-causing organisms, such as the bacteria campylobacter, escherichia, listeria, salmonella, yersinia, and brucella. These types of bacteria can lead to diarrhea, stomach cramps, fever, headache, vomiting, and exhaustion. Further, pasteurization prevents diseases like tuberculosis, diphtheria, polio, salmonellosis, strep throat, scarlet fever, and typhoid fever from developing from food borne pathogens. It is against the law in Ohio to sell raw milk.
